Shrimp and Crab Quesadilla

1 Pound Seafood Sensations® (Item# 004530)
4 Tablespoons Olive Oil
8 Each Flour Tortillas, 10-Inch
1/2 Pound Sharp Cheddar Cheese, Shredded
1.5 Pounds Jack Cheese, Shredded
1 Cup Cilantro Leaves, Chopped
1 Cup Guacamole
1 Cup Salsa


  1. Heat 1 tablespoon of oil in a large skillet over medium/high heat.
  2. Place a tortilla in skillet and sprinkle 1/4th of each cheese.
  3. Arrange 1/2 cup of the Seafood Sensations™ and 1/4 cup cilantro on top of the cheese.
  4. Top with a second tortilla.
  5. Cook for 2 minutes, then flip the quesadilla and cook the other side for 2 more minutes. Slide the quesadilla onto a plate.
  6. Repeat with the remaining ingredients.
  7. Cut the quesadilla into eights and serve with guacamole and salsa. Yield: 4 servings.
