Parmesan Tomato Crab and Seafood Salad

6 Ounces Jumbo Crab Sensations® (Item# 004630)
1 Ounce Roasted Red Peppers, Diced
1/2 Ounce Bermuda Onion, Diced
1 Ounce Tomato, Diced And Seeded
2 Sprigs Italian Parsley, Chopped
1 Leaf Fresh Basil Chiffonade
1 Each Garlic Clove, Minced
1/8 Cup Olive Oil
To Taste Kosher Salt
To Taste Fresh Ground Pepper
1 Each Heirloom Tomato, Thick Sliced
1/4 Cup All-Purpose Flour, Seasoned With Salt & Pepper
1/4 Cup Panko
2 Each Eggs
2 Tablespoons Dijon Mustard
1/8 Cup Parmesan Cheese, Grated
2 Leaves Fresh Basil
Garnish Balsamic Glaze


  1. First, prepare the Italian Jumbo Lump Crab Sensation Salad.
  2. Add the first 10 ingredients in a bowl and let chill for 8 hours.
  3. Next, prepare the Parmesan crusted tomato.
  4. Season flour with salt and pepper.
  5. Season panko with Parmesan cheese, fresh basil, salt and pepper.
  6. Whisk the eggs with Dijon mustard.
  7. Bread the tomatoes, first dip in flour, then egg and panko.
  8. Fry until golden brown.
  9. Top the crispy tomato with the crab salad and drizzle with balsamic glaze.
