1 Each Tavern Battered® Pollock Fillets 2-3 oz. (Item# 070043)
1 Cup Short Grain Sticky Rice
1/4 Each Avocado, Large Dice
1 Small Sweet Potato, Large Dice, Roasted
Warm Teriyaki Pineapple Salsa:
1 Tablespoon Olive Oil
1/4 Cup Pineapple, Small Diced
1 Tablespoon Jalapeno, Small Diced
1 Tablespoon Red Bell Pepper, Small Diced
1 Tablespoon Red Onion, Small Diced
1 Tablespoon Teriyaki Sauce
2 Teaspoons Cilantro, Chopped
To Taste Salt
To Taste Pepper
Garnish:
Macadamia Nuts, Toasted, Chopped
Lime Wedge

Directions

  1. Prepare the salsa in a skillet with olive oil. Once hot, add the pineapple, onions, peppers and jalapenos. Sear all ingredients and add the teriyaki sauce. Add the cilantro and season to desired taste.
  2. Prepare the Tavern Battered Pollock according to package instructions to an internal temperature of 165°F.
  3. Add the warm rice to a bowl and arrange the Pollock, warm roasted sweet potatoes, avocado, and top the pollock with the warm pineapple salsa.
  4. Garnish with the chopped macadamia nuts and a lime wedge.
