Ingredients

5 Each Oven Ready Coconut Shrimp 25/35 ct. (Item# 057466)
1.5 Cups Mixed Greens
1/2 Each Mango, Diced
1/8 Each Red Bell Pepper, Diced
2 Each Scallions, Chopped
1/4 Each Cucumbers, Peeled, Seeded, Diced
1/8 Cup Chow Mein Noodles, Crispy
Dressing:
1 Ounce Sweet Thai Chili Sauce
1/2 Ounce Coconut Milk
1/2 Ounce Lime, Fresh, Juice
1 Sprig Cilantro, Chopped
Garnish:
As Desired Cashews, Toasted, Chopped

Directions

  1. Prepare the Oven Ready Coconut Shrimp according to package instructions and 165°F internal temperature.
  2. Prepare the dressing by mixing the ingredients together and chill.
  3. Toss the dressing with the salad ingredients and top with the Oven Ready Coconut Shrimp and toasted cashews.
