2 Each Tavern Battered® Cod Fillets 2-3 oz. (Item# 070058)
1 Tablespoon Olive Oil
1/4 Each Onion, Sweet, Julienne
2 Each Garlic, Cloves
1/8 Cup Green olives, Pitted
1 Tablespoon Capers
1 Tablespoon Caper Juice
2 Tablespoons White Wine
1/2 Cup Grape Tomatoes Medley, Halved
1 Each Jalapeno, Seeded & Sliced
1 Tablespoon Oregano, Fresh, Chopped
2 Tablespoons Parsley, Fresh, Chopped
1 Tablespoon Thyme, Fresh Chopped
1 Each Bay Leaf
1 Tablespoons Lime, Fresh, Juiced
To Taste Salt
To Taste Pepper


  1. Sauté the onions, garlic, green olives and capers in a skillet. Add the caper Juice and the white wine. Add the tomatoes, oregano, parsley thyme and bay leaf.
  2. Simmer for approximately 10 minutes and finish with lime juice, salt and pepper.
  3. Prepare the Pollock to an internal temperature of 165°F.
  4. Serve over Spanish rice.
