1 | Tablespoon | Olive Oil |
1/4 | Each | Onion, Sweet, Julienne |
2 | Each | Garlic, Cloves |
1/8 | Cup | Green olives, Pitted |
1 | Tablespoon | Capers |
1 | Tablespoon | Caper Juice |
2 | Tablespoons | White Wine |
1/2 | Cup | Grape Tomatoes Medley, Halved |
1 | Each | Jalapeno, Seeded & Sliced |
1 | Tablespoon | Oregano, Fresh, Chopped |
2 | Tablespoons | Parsley, Fresh, Chopped |
1 | Tablespoon | Thyme, Fresh Chopped |
1 | Each | Bay Leaf |
1 | Tablespoons | Lime, Fresh, Juiced |

Directions
- Sauté the onions, garlic, green olives and capers in a skillet. Add the caper Juice and the white wine. Add the tomatoes, oregano, parsley thyme and bay leaf.
- Simmer for approximately 10 minutes and finish with lime juice, salt and pepper.
- Prepare the Pollock to an internal temperature of 165°F.
- Serve over Spanish rice.
