Shrimp Saltimbocca Pasta

1 Pound Seafood Sensations® (Item# 004530)
2 Pounds Cavatappi Pasta, Cooked
2 Pounds Olive Oil
1 Each Yellow Onion, Julienned
3 Ounces Prosciutto, Thin Sliced
8 Leaves Fresh Chopped Sage
1 Each Tomato, Diced
4 Ounces White Wine
12 Ounces Chicken Stock
4 Ounces Butter
4 Ounces Parmesan Cheese, Finely Shredded
To Taste Kosher Salt
To Taste Fresh Ground Pepper


  1. In a large saute pan heat the olive oil, add onions and cook till golden.
  2. Add the shrimp sensations and prosciutto and saute for 30 seconds.
  3. Deglaze the pan with white wine and reduce by half.
  4. Add the chicken stock and reduce by half.
  5. Swirl in the butter; add the sage and tomatoes.
  6. Add the pasta and toss all ingredients together.
  7. Season with salt and pepper.
  8. Garnish with finely shredded cheese and serve.
