Shrimp Saltimbocca Pasta

Directions
- In a large saute pan heat the olive oil, add onions and cook till golden.
- Add the shrimp sensations and prosciutto and saute for 30 seconds.
- Deglaze the pan with white wine and reduce by half.
- Add the chicken stock and reduce by half.
- Swirl in the butter; add the sage and tomatoes.
- Add the pasta and toss all ingredients together.
- Season with salt and pepper.
- Garnish with finely shredded cheese and serve.
