Seafood Sensations® & Grits Sundae
Sundaes are for seafood. Add our Seafood Sensations® to a creamy, comfy Cajun seasoned sauce over cheesy grits in a sundae cup, and you’ll have to fight off the urge to eat it yourself before serving it to your patrons.

3 | Ounces | Seafood Sensations® (Item# 004530) |
1 | Cup | Prepared Cheese Grits |
2 | Teaspoons | Cajun Seasoning |
1 | Each | Shallots, Julienne |
1/4 | Cup | White Wine |
1/2 | Cup | Heavy Cream |
4 | Tablespoons | Butter, Divided |
3 | Each | Tomatoes, Grape, Halved |
1 | Each | Scallions, Chopped |
To | Taste | Salt & Pepper |
Directions
- In a pan add the shallots and wine and reduce till almost dry. Add the cream and reduce by 2/3rds take off the heat and swirl in 2 tablespoons of butter and season with salt and pepper.
- In a separate sauté pan add 2 tablespoons of butter, sauté the Seafood Sensations® and tomatoes with the Cajun Seasoning.
- Add the Seafood Sensations® to the cream and serve over hot cheesy grits. Garnish with chopped scallions.
