Pineapple Mango Salsa

Pineapple Mango Dressing perfect for a Caribbean Coconut Shrimp Salad.

Menu Part


1 cup fresh pineapple, peeled, cored and cubed
2 tablespoons Champagne vinegar
1 cup fresh mango, peeled & diced
1/4 cup Extra Virgin olive oil
1/2 cup honey
2 teaspoons basil, chopped
salt and pepper to taste


  1. Combine pineapple, mango, vinegar, honey, and basil.
  2. Add oil slowly until combined.
  3. Adjust seasoning.
