Pesto Aiolo

Menu Part


2 cups packed basil leaves, cleaned
3/4 cup extra virgin olive oil
3 cloves garlic
1/4 cup pine nuts
1 tablespoon lemon juice
1/4 cup Parmesan cheese, shredded
1.5 cups mayonnaise
black pepper to taste
salt to taste


  1. Combine garlic, basil and pine nuts in a food processor or blender and mix.
  2. Slowly add half of the Olive Oil to incorporate ingredients, then add the Parmesan cheese, remaining oil, salt and pepper and blend.
  3. Fold the pesto mixture into the mayonnaise and reserve.
