Parmesan Pollock with Creamy Polenta & Roasted Tomato Arrabbiata

Ingredients

2 Each Oven Ready Parmesan Crusted Pollock Fillets 3-4 oz. (Item# 075434)
4 Slices Mozzarella Cheese, Fresh
1.5 Cups Creamy Polenta, Prepared
4 Ounces Roasted Arrabbiata Sauce
Garnish:
4 Leaves Basil, Fresh, Chiffonade
As Desired Marinated Olives, Pitted

Directions

  1. Prepare the Parmesan Pollock according to package instructions and 165°F internal temperature.
  2. Spoon about 2 ounces of the arrabbiata sauce over each portion of pollock. Add 2 slices of fresh mozzarella on each and bake until cheese is melted.
  3. Place the polenta on the plate. Add the pollock on top of the polenta and top with additional arrabbiata sauce.
  4. Garnish with fresh basil and olives.
