Pan Seared Lobster Cakes with Lemon Tarragon Aioli

Ingredients

1/2 Pound Lobster Sensations® (Item# 004610)
1 Cup Butter Cracker Crumbs
1 Each Egg
1/2 Cup Mayonnaise
1/2 Cup Scallions
1 Tablespoon Lemon, Fresh, Juice
To Taste Salt
To Taste Pepper, Black, Fresh Ground
Lemon Tarragon Aioli:
1/4 Cup Mayonnaise
1 Clove Garlic, Paste
1 Teaspoon Tarragon, Chopped
1/2 Teaspoon Lemon, Fresh, Juice
1/4 Teaspoon Lemon Zest
1/4 Teaspoon Pepper, Black, Fresh Ground
Garnish:
Lemon, Wedge
Tarragon Leaves, Torn

Directions

  1. Fold the Lobster Sensations® with the crumb, egg, mayo, scallions, lemon juice and season with salt and pepper to taste. Let chill for at least 1 hour. Form into desired cakes.
  2. To make the aioli mix all ingredients together in a mixing bowl and chill.
  3. Sauté or bake the Lobster Sensations® cakes until golden and serve with the aioli.
  4. Garnish with torn tarragon leaves and fresh lemon wedge.
