Mediterranean Cod Sandwich

8 Each Tavern Battered® Cod Fillets 2-3 oz. (Item# 070053)
4 Each Ciabatta Rolls
1 Cup Baba Ganoush
1.5 Cups Butter Lettuce, Shredded
2 Each Radishes, Thinly Sliced
1 Each Carrot, Shredded, Medium
1/2 Cup Feta Cheese


  1. Place Tavern Battered® Cod in a 350°F fryer and cook to box instructions or until an internal temperature of 165°F is reached. Fillets should be golden brown and crispy.
  2. In a medium bowl, toss lettuces, radishes and carrot with lime juice and oil.
  3. Heat ciabatta rolls until slightly warm.
  4. Spread baba ganoush on bottom piece of a ciabatta roll. Place 2 fish fillets on top followed by salad mixture.
  5. Top with ciabatta and serve.
