3 Each Puffy Taco Shells, Flour, 5”
Salsa:
1/4 Cup Golden Pineapple, Grilled, Small Diced
1/8 Cup Mango, Peeled, Seeded, Small Dice
1/8 Cup Papaya, Ripe, Small Diced
2 Tablespoons Red Bell Pepper, Seeded, Brunoise
2 Tablespoons Bermuda Onion, Peeled, Brunoise
1/2 Each Jalapeno, Seeded, Brunoise
1 Teaspoon Cilantro, Leaves, Chopped, No Stems
1 Teaspoon Limes, Juiced, Fresh
To Taste Salt
To Taste Black Pepper, Fresh Ground
Garnish:
As Desired Red Cabbage, Fine Shred
As Desired Cilantro Leaves, Rough Chop

Directions

  1. Prepare the Cracker Jack Popcorn shrimp according to package instructions to an internal temperature of 165°F.
  2. Arrange the cabbage and cilantro leaves on the tortillas, sprinkle with the salsa and serve.
