Lobster “Sushi” Breakfast Roll

Succulent lobster and seafood pair with crunchy breaded Gold Pack® Fantail Shrimp and creamy avocado, rolled up in a scrambled egg sheet. Try this unique breakfast sushi roll!

1 Pound Lobster Sensations® (Item# 004610)
12 Each Gold Pack Round Shrimp 16/20 ct. (Item# 013120)
8 Each Eggs
1 Each Avocado
1/2 Cup Mayonnaise
2 Tablespoon Sriracha
1 Tablespoon Lemon juice
6 Each Masago Eggs
1 Each Scallion, Chopped
1 Each Cilantro, Chopped


  1. Preheat fryer to 350°F.
  2. Combine Lobster Sensations with mayo, sriracha and lemon juice. Season to taste with salt and pepper.
  3. Over medium flame, heat saute pan and spray with pan release. Ladle in 4 ounces of egg and allow to spread into a thin layer and cook fully. Slide out of pan and prepare to add filling.
  4. Fry shrimp 3-5 minutes, or until golden brown and fully cooked until 165°F internal temperature. Remove tails and cut shrimp in half. Slice avocado.
  5. Assemble “sushi rolls” by placing a scoop of lobster, 6 shrimp halves and 3-4 thin slices of avocado to the side of each egg “sheet”. Spread along the edge and roll. Garnish with more avocado, chopped cilantro and masago eggs.
