Lobster Stuffed Avocado

Avocados have been stuffed with lobster before. But never like this. How about a hot Kataifi-coated avocado, filled with a Lobster Sensations® stuffing? It’s frontpage newsworthy.

4 Ounces Lobster Sensations® (Item# 004610)
3 Tablespoons Butter, Unsalted
1/4 Cup Ritz® Crackers, Crumbs
1/2 Each Shallot, Finely Chopped
1 Teaspoon Parsley, Finely Chopped
1 Teaspoon Chives, Finely Chopped
To Taste Salt & Pepper
1 Each Avocado
1 Cup All Purpose Flour
2 Each Eggs, Beaten
1 Cup Kataifi, Shredded Fillo Dough
3 Ounces Lemon Chive Butter Sauce
1 Teaspoon Chives, Chopped
2 Each Lemon, Fresh, Wedges


  1. Sauté the shallots and Lobster Sensations® in the butter.
  2. Add the Ritz® Crackers, parsley, chives, salt and pepper and let cool.
  3. Peel and seed the avocado. Stuff one each half with Lobster Sensations® stuffing. It should resemble the whole avocado shape.
  4. Season the avocado with salt and pepper and roll it in flour.
  5. Pat off the excess flour and proceed to roll in the egg mixture.
  6. Wrap the Kataifi and fry at 350°F until the internal temperature reaches 165°F.
  7. Let stand, sprinkle lightly with salt. Serve with lemon chive butter sauce, fresh chopped chives and fresh lemon.
