Lobster and Seafood Enchilada

3 Ounces Lobster Sensations® (Item# 004610)
1/2 Cup Onion, Chopped Fine
1 Teaspoon Jalapeño, Seeded And Chopped Fine
1 Teaspoon Sweet Butter
1 Teaspoon Garlic, Minced
1 Teaspoon Chili Powder
1 Teaspoon Ground Cumin
1 Cup Colby Jack Cheese, Shredded
1/2 Cup Fresh Cilantro, Minced
3 Each Corn Or Flour Tortillas, 6-Inch
As Needed Enchilada Sauce
3 Tablespoons Sour Cream
3 Sprigs Cilantro
To Taste Salt And Pepper


  1. In a sauté pan add the butter and melt, add in the onion, Lobster Sensations, jalapeño and garlic and sauté until soft.
  2. Add in the cumin, chili powder salt and pepper and sauté another minute to incorporate all ingredients well.
  3. Warm up the tortillas and fill each one with a third of the mixture and sprinkle cilantro across each one then roll.
  4. Place on a plate and top with sauce and shredded cheese and broil until the cheese is melted.
  5. Garnish with sour cream and fresh cilantro sprig.
