Lobster & Seafood Breakfast Crepes

This upscale, colorful dish combines rich lobster & seafood, corn, tomatoes, and more, wrapped in a light crepe topped with a decadent champagne cream sauce. Using Lobster Sensations® gives this crepe a savory note with a premium menu price.

2 Ounces Lobster Sensations® (Item# 004610)
1/2 Ounce Butter, Clarified
1/4 Cup Corn, Roasted, Off the Cob
1 Each Chive, Chopped Fine
1/2 Each Tomato, Seeded
1/8 Cup Scallions
To Taste Salt
To Taste Pepper
Butter Sauce:
1/4 Cup White Wine
1/2 Each Shallot, Fine Diced
1/4 Cup Heavy Cream
4 Tablespoons Butter, Unsalted
1/4 Each Lemon, Fresh, Juiced
To Taste Salt, Kosher
To Taste Black pepper
1 Each Chives
2 Each Crepes, 6-Inch


  1. Reduce wine and shallots in a pan till almost dry.
  2. Add cream and reduce by 2/3.
  3. Slowly whisk in the butter till creamy and smooth on low heat.
  4. Add lemon juice and adjust seasoning.
  5. Add the chopped chives.
  6. Saute the Lobster Sensations in clarified butter. Then add the tomatoes, scallions, corn, salt and pepper.
  7. Mix the Lobster Sensations mixture with the butter sauce.
  8. Fill the crepe with the mixture and add the additional mixture over the crepe as the sauce. Garnish with chives.
