Lobster & Seafood Breakfast Crepes

Butter Sauce: | ||
1/4 | Cup | White Wine |
1/2 | Each | Shallot, Fine Diced |
1/4 | Cup | Heavy Cream |
4 | Tablespoons | Butter, Unsalted |
1/4 | Each | Lemon, Fresh, Juiced |
To Taste | Salt, Kosher | |

Directions
- Reduce wine and shallots in a pan till almost dry.
- Add cream and reduce by 2/3.
- Slowly whisk in the butter till creamy and smooth on low heat.
- Add lemon juice and adjust seasoning.
- Add the chopped chives.
- Saute the Lobster Sensations in clarified butter. Then add the tomatoes, scallions, corn, salt and pepper.
- Mix the Lobster Sensations mixture with the butter sauce.
- Fill the crepe with the mixture and add the additional mixture over the crepe as the sauce. Garnish with chives.
