Lobster Pad Thai

1 Pound Lobster Sensations® (Item# 004610)
1/2 Pound Broad Rice Noodles
2 Tablespoons Tamarind Paste
1/4 Cup Lime Juice
3 Tablespoons Sweet Thai Chili Sauce
3 Tablespoons Brown Sugar
1 Teaspoon Asian Chili Sauce or Sambal Oelek
1 Teaspoon Fish Sauce
1/4 Cup Vegetable or Peanut Oil
1/2 Each Onion, Sliced
2 Each Cloves Garlic, Minced
1 Each Carrot, Cut Into Matchsticks
2 Each Eggs, Lightly Beaten
2 Cups Bean Sprouts
1/4 Cup Coarsely Chopped Cilantro
1/4 Cup Chopped Unsalted Roasted Peanuts
2 Each Green Onions, Sliced
4 Each Lime Wedges


  1. Cook rice noodles according to package directions. Drain and set aside. Meanwhile, whisk tamarind paste with 1/4 cup water. Stir in lime juice, sweet Thai chili sauce, brown sugar, Asian chili sauce and fish sauce; set aside.
  2. Heat oil in large skillet or wok set over medium-high heat; cook onion and garlic for about 1 minute or until fragrant. Add carrots; cook, stirring, for 1 minute.
  3. Add noodles and lobster. Push mixture to one side of skillet and pour eggs onto empty side of pan; cook for 1 minute or until eggs are set. Mix eggs into noodle mixture. Add reserved tamarind mixture and toss together to coat. Add bean sprouts; toss to combine.
  4. Divide evenly among 4 bowls. Top with cilantro, peanuts, green onions and lime wedges.
