Lobster Pad Thai

1/4 | Cup | Lime Juice |
3 | Tablespoons | Sweet Thai Chili Sauce |
3 | Tablespoons | Brown Sugar |
1 | Teaspoon | Asian Chili Sauce or Sambal Oelek |
1 | Teaspoon | Fish Sauce |
1/4 | Cup | Vegetable or Peanut Oil |
1/2 | Each | Onion, Sliced |
2 | Each | Cloves Garlic, Minced |
1 | Each | Carrot, Cut Into Matchsticks |
2 | Each | Eggs, Lightly Beaten |
2 | Cups | Bean Sprouts |
1/4 | Cup | Coarsely Chopped Cilantro |
1/4 | Cup | Chopped Unsalted Roasted Peanuts |
2 | Each | Green Onions, Sliced |
4 | Each | Lime Wedges |
Directions
- Cook rice noodles according to package directions. Drain and set aside. Meanwhile, whisk tamarind paste with 1/4 cup water. Stir in lime juice, sweet Thai chili sauce, brown sugar, Asian chili sauce and fish sauce; set aside.
- Heat oil in large skillet or wok set over medium-high heat; cook onion and garlic for about 1 minute or until fragrant. Add carrots; cook, stirring, for 1 minute.
- Add noodles and lobster. Push mixture to one side of skillet and pour eggs onto empty side of pan; cook for 1 minute or until eggs are set. Mix eggs into noodle mixture. Add reserved tamarind mixture and toss together to coat. Add bean sprouts; toss to combine.
- Divide evenly among 4 bowls. Top with cilantro, peanuts, green onions and lime wedges.
