Lobster Noodle Salad with Krabbycakes®

2.5 | Pounds | Udon Noodles |
1 | Cup | Red and Green Bell Peppers, Julienne |
1 | Tablespoon | Parsley, Chopped |
1 | Tablespoon | Ginger, Shredded |
1/4 | Teaspoon | Garlic, Chopped |
1/2 | Cup | Scallions, Sliced |
1/4 | Cup | Carrot, Julienne |
1/4 | Cup | Sugar Snap Peas |
Dressing: | ||
4 | Ounces | Chinese Stir-Fry Sauce |
1 | Ounce | Rice Wine Vinegar |
3 | Ounces | Canola Oil |
Directions
- Blanch noodles in boiling water for 7-10 minutes, then drain and cool in icy water.
- Combine all the ingredients and add the dressing. Mix well and chill.
- Place 6 oz. of noodle salad in a bowl, top with fried Krabbycakes® and garnish with green onion.
