Lobster Loaded Quesadilla Nachos

A delicious mashup of two fan-favorite appetizers, quesadillas and nachos, featuring Lobster Sensations®, melted cheese, and all the classic toppings. Perfect for sharing (or indulging all to yourself), this one’s sure to be a crowd favorite!

Ingredients

1 Pound Lobster Sensations® (Item# 004610)
8 Each Tortillas, Flour, 6 Inch
1 Pound Cheese, Mexican Blend, Shredded
3 Tablespoons Butter
1 1/2 Cup Pico de Gallo
1/2 Cup Black Beans, Warm
1/4 Cup Jalapeño, Sliced
1/4 Cup Scallions, Chopped
1/4 Cup Chipotle Lime Crema
1/2 Cup Guacamole
3 Each Lime, Fresh, Wedge
2 Tablespoons Cilantro, Chopped

Directions

  1. Sauté the Lobster Sensations® in the butter and add ¾ cup of pico de gallo. Set aside at room temperature.
  2. Stuff each tortilla with 1 ounce of Lobster Sensations® and 1 ounce of shredded cheese. Sauté until the cheese is melted and the tortilla is golden brown. Fold the tortilla in half and cut into 3 wedges each.
  3. Arrange the Lobster stuffed chips on an oven safe platter and sprinkle remainder of cheese over the chips. It is okay if they are stacked or spread out. Broil the platter until the cheese is melted.
  4. Add the remainder of the Lobster Sensations®, pico de gallo, warm black beans, jalapeños and scallions over the nachos. Squeeze the fresh lime, drizzle with the chipotle lime crema, and sprinkle with the chopped cilantro.
  5. Serve the guacamole over the top or on the side.
