Lobster Knödel

1/2 | Cup | Onions, Small Diced |
Dough: | ||
2 | Pounds | Potatoes, Starchy |
1 | Each | Egg |
1 | Each | Egg, Yolk |
1/2 | Cup | Potato or Corn Starch |
To Taste | Salt | |

1 | Teaspoon | Parsley, Chopped |
Butter Parsley Sauce: | ||
1 | Stick | Butter |
To Taste | Salt | |

1 | Tablespoon | Parsley, Chopped Fine |
Directions
- Cook the potatoes until tender, drain and let cool at room temperature. Rice or mash the potatoes, add the egg, egg yolk, starch, salt and parsley. Mix the dough with your hands until it is soft and forms a ball.
- For the filling render the bacon, remove when bacon is almost crispy. Add the onions to the bacon fat until almost caramelized and the add the Lobster Sensations. Add the bacon back into the mixture.
- Divide the dough evenly into plum sized balls, press into disks, add the stuffing and shape back into a ball.
- In a large pot, bring water to a boil and place the dumplings in with a slotted spoon (3-5 at a time). Once they begin to float cook for another 4-5 minutes. Remove with a slotted spoon and plate as desired.
- For the sauce, brown the butter slightly, season as desired, add the finely chopped parsley and spoon over the finished Knödel.
