Lemon Scented Jumbo Crab Orzotto

1/8 | Cup | Olive Oil |
1/4 | Cup | Shallot, Finely Diced |
2 | Cloves | Garlic, Chopped |
1/2 | Cup | Orzo |
1/8 | Cup | White Wine |
1 | Cup | Seafood Stock, Hot |
1/8 | Cup | Mascarpone |
1/4 | Cup | Parmesan Cheese, Grated |
1/4 | Teaspoon | Lemon Zest |
1/4 | Each | Lemon, Fresh, Juice |
1 | Each | Scallions, Finely Chopped |
To taste | Sea Salt | |
To taste | Pepper |
Directions
- In a skillet add the olive oil and shallots, add the garlic and then the orzo. Cook while stirring until the orzo is slightly toasted and the and coated well with the oil.
- Add the white wine and stir for a couple minutes, then add the hot stock in three parts while stirring until the orzo becomes al dente. Add in the parmesan cheese, then the lemon juice and zest. Fold in the the Crab Sensations and mascarpone and season with salt and pepper.
- Sprinkle the scallions over the top and serve hot.
