Lemon Infused Orzo with Shrimp, Crab & Seafood Roasted Garlic Sauce

1 Pound Seafood Sensations® (Item# 004530)
3 Cup Orzo, Cooked
12 Ounces Cherry Tomatoes, Halved
2 Each Persian Cucumbers, Diced
5 Ounces Feta, Diced
1/2 Each Red Onion, Julienned
1 Each Green Pepper, Julienned
5 Ounces Black Olives, De-Seeded
1 1/2 Teaspoons Oregano, Dried
2 Teaspoons Lemon Zest
3 Tablespoons Lemon, Juice, Fresh
5 Tablespoons Olive Oil
1 Teaspoon Dijon
1 Each Garlic Clove, Minced
1 Teaspoon Sugar
To Taste Sea Salt
To Taste Black Pepper
Roasted Garlic Sauce:
1 Cup Garlic, Roasted
1 Teaspoon Sea Salt
4 Cups Canola Oil
1/4 Cup Lemon Juice


  1. Cook the orzo in boiling water and salt. Rinse, drain and cool.
  2. Add the remainder of the ingredients and toss together well.
  3. For the roasted garlic sauce, place the garlic into the food processor and puree till smooth.
  4. With the processor on slowly add 1/2 cup of oil and then add a teaspoon of the lemon juice.
  5. Continue alternating 1/2 cup of oil and teaspoon of lemon juice until they are both gone. The emulsion should be light and fluffy.
