Lemon Chive Butter

white wine |

shallot, fine dice |

heavy cream |

butter, unsalted |

chives, chopped fine |

fresh lemon juice |

kosher salt to taste |

fresh ground black pepper to taste |
Directions
- Reduce wine and shallots in a pan till almost dry.
- Add cream and reduce by 2/3.
- Slowly whisk in the butter till creamy and smooth on low heat.
- Add lemon juice and adjust seasoning.
- Strain and add in the chopped chives.
