Lemon Chive Butter

Ingredients

1 cup white wine
1 each shallot, fine dice
1/2 cup heavy cream
1/4 pound butter, unsalted
3 each chives, chopped fine
1/2 each fresh lemon juice
kosher salt to taste
fresh ground black pepper to taste

Directions

  1. Reduce wine and shallots in a pan till almost dry.
  2. Add cream and reduce by 2/3.
  3. Slowly whisk in the butter till creamy and smooth on low heat.
  4. Add lemon juice and adjust seasoning.
  5. Strain and add in the chopped chives.
