Jumbo Crab Low Country Boil Bites with Zesty Lemon Aioli

1 Pound Jumbo Crab Sensations® (Item# 004630)
1/2 Cup Andouille, Small Diced
1/4 Cup Onions, Fine Diced
1/8 Cup Green Bell Peppers, Fine Diced
1/8 Cup Celery, Fine Diced
1 Each Egg, Beaten
1/2 Cup Mayonnaise
1 Tablespoon Dijon
1 Tablespoon Worcestershire Sauce
1 Tablespoon Crab Boil Seasoning
20 Each Ritz Crackers, Ground
To Taste Salt
To Taste Pepper
2 Cups Seasoned Flour
6 Each Eggs, Beaten
2 Cups Panko
1 Each Lemon, Wedges
1 Cup Zesty Lemon Aioli


  1. Sauté the andouille with the onions, celery and peppers and let cool.
  2. Slightly beat the egg and add the remainder of the ingredients excluding the aioli. Let sit in the refrigerator for at least an hour to set up.
  3. Roll into 24 balls and roll them in seasoned flour, egg and panko and fry at 350°F to 165°F internal temperature.
  4. Serve with zesty lemon aioli and lemon wedges.
