Deep Cut Coconut Shrimp & Braised Cabbage with Apples & Bacon

Ingredients

5 Each Deep Cut Coconut (Item# 057446)
1 Tablespoon Butter
2 Cups Red Cabbage, Shredded
1/2 Each Onion, Sweet, Julienne
1 Each Apples, Granny Smith, Peeled, Seeded & Sliced
1 Tablespoon Sugar
1/2 Cup Apple Cider
1 Tablespoon Apple Cider Vinegar
2 Slices Bacon, Chopped
1 Teaspoon Salt
3 Each Allspice, Whole
2 Each Cloves
1 Each Bay Leaf
To Taste Salt
To Taste Pepper

Directions

  1. Sauté the onions in butter until translucent.
  2. Add the cabbage, apples, spices and cider. Cover and let braise for 1 hour. Stir occasionally and add a little water if it becomes dry.
  3. Add the apple cider vinegar to the braise, mix well and season with salt and pepper.
  4. Cook the bacon until crispy.
  5. Fry the Deep Cut Coconut Shrimp according to package instructions and 165°F internal temperature.
  6. Lay the shrimp over the braised cabbage and sprinkle with crispy bacon.
