| 3 | Ounces | Leeks, Julienned, Caramelized |
| 1 | Each | Artisan Bun |
| Creamy Dijon Leeks: | ||
| 3 | Ounces | Leeks, Julienned |
| 1 | Each | Shallot, Julienned |
| 2 | Tablespoons | White Wine |
| 2 | Teaspoons | Dijon |
| 1/4 | Cup | Heavy Cream |
| To | Taste | Sea Salt |
| To | Taste | Pepper, Fresh Ground |
Directions
- Prepare the creamy leeks by caramelizing the leeks and shallot together in a sauté pan. Deglaze the pan with white wine and add the Dijon and the cream. Let reduce till thick and creamy.
- Prepare the Southern Crispy Flounder according to package instructions till 165°F internal temperature.
- Toast the bun and arrange the two pieces of flounder, top with cheese and bacon. Spoon over the leeks and add the top bun. Enjoy!!!
