Ingredients

2 Each Craft Beer Battered™ Pollock Fillets 2-3 oz. (Item# 078612)
1 Pound Potatoes, Yukon Gold, Cooked & Quartered
2 Slices Bacon, Chopped
1/2 Each Red Onions, Diced
1 Each Scallions, Chopped
1 Tablespoon Dijon Mustard
1/4 Cup Apple Cider Vinegar
2 Tablespoons Dill, Fresh, Chopped
To Taste Salt
To Taste Pepper
Garnish:
As Desired Fresh Dill
1 Each Lemon, Fresh, Wedge

Directions

  1. Cook the bacon in a sauté pan until crispy and remove. Add the onions to the bacon fat and cook until translucent, add the scallions and cook for approximately 1 minute.
  2. Remove the pan from the heat and add the vinegar and the Dijon and stir well.
  3. Add the dressing to the warm potatoes and stir in the dill. Season with salt & prepper and keep warm.
  4. Cook the Craft Beer Battered Pollock according to package instructions and 165° F internal temperature.
  5. Serve the Craft Beer Battered Pollock over the warm potato salad and garnish with fresh dill.
