1 | Pound | Potatoes, Yukon Gold, Cooked & Quartered |
2 | Slices | Bacon, Chopped |
1/2 | Each | Red Onions, Diced |
1 | Each | Scallions, Chopped |
1 | Tablespoon | Dijon Mustard |
1/4 | Cup | Apple Cider Vinegar |
2 | Tablespoons | Dill, Fresh, Chopped |
To Taste | Salt | |
To Taste | Pepper | |

As Desired | Fresh Dill | |
1 | Each | Lemon, Fresh, Wedge |
Directions
- Cook the bacon in a sauté pan until crispy and remove. Add the onions to the bacon fat and cook until translucent, add the scallions and cook for approximately 1 minute.
- Remove the pan from the heat and add the vinegar and the Dijon and stir well.
- Add the dressing to the warm potatoes and stir in the dill. Season with salt & prepper and keep warm.
- Cook the Craft Beer Battered Pollock according to package instructions and 165° F internal temperature.
- Serve the Craft Beer Battered Pollock over the warm potato salad and garnish with fresh dill.
