Crab & Seafood Coconut Curried Risotto

Menu Part


3 Ounces Jumbo Crab Sensations® (Item# 004630)
1 Teaspoon Olive Oil, Light
2 Tablespoons Onions, Diced
1 Teaspoon Lemongrass
¼ Cup Arborio Rice
1 Teaspoon Green Curry Paste
¼ Cup Coconut Milk, Warm
¼ Cup Chicken Stock, Hot
1 Pinch Coconut, Shaved
½ Each Lime
2 Sprigs Cilantro, 1 Chopped /1 for Garnish
As Needed Salt
As Needed Pepper


  1. Sauté the onions and lemongrass in olive oil and then add the arborio rice and sauté till rice is slightly toasted.
  2. Add the curry paste and then add the coconut milk and stir.
  3. Add the chicken stock while occasionally stirring until rice is cooked. Add additional chicken stock if needed.
  4. Season with cilantro, salt, pepper and a squeeze of lime.
  5. Serve in a coconut shell and garnish with shaved coconut and a sprig of cilantro.
