Crab & Seafood Coconut Curried Risotto

Directions
- Sauté the onions and lemongrass in olive oil and then add the arborio rice and sauté till rice is slightly toasted.
- Add the curry paste and then add the coconut milk and stir.
- Add the chicken stock while occasionally stirring until rice is cooked. Add additional chicken stock if needed.
- Season with cilantro, salt, pepper and a squeeze of lime.
- Serve in a coconut shell and garnish with shaved coconut and a sprig of cilantro.
