Coconut Shrimp Stir-Fry

Ingredients

5 Each Oven Ready Coconut Shrimp 25/35 ct. (Item# 057466)
1 Tablespoon Peanut Oil
1/2 Teaspoon Ginger, Minced
1/2 Teaspoon Garlic, Minced
1 Teaspoon Scallions, Chopped
2 Tablespoons Soy Sauce
1/4 Each Red Bell Pepper, Julienne
1 Each Carrots, Julienne
1/4 Cup Snow Peas
1/8 Cup Shiitake Mushrooms, Sliced
1 Cup White Rice, Steamed
Garnish:
As Desired Coconut, Toasted

Directions

  1. Prepare the Oven Ready Coconut Shrimp according to package instructions and 165°F internal temperature.
  2. In a wok or sauté pan heat the peanut oil, add the ginger, garlic and scallions to aroma. Add the veggies and finish with soy sauce.
  3. Serve over white rice, place the coconut shrimp on top and sprinkle with toasted coconut.
