Directions
- Prepare the Oven Ready Coconut Shrimp according to package instructions and 165°F internal temperature.
- In a wok or sauté pan heat the peanut oil, add the ginger, garlic and scallions to aroma. Add the veggies and finish with soy sauce.
- Serve over white rice, place the coconut shrimp on top and sprinkle with toasted coconut.
