1/2 Pound Breaded Calamari Rings (Item# 057802)
1 Each Scotch Bonnet Pepper, Sliced
1/4 Each Red Bell Pepper, Diced
1/4 Each Onion, Sweet, Diced
2 Each Garlic, Cloves, Chopped
2 Sprigs Thyme, Fresh, Chopped
2 Each Scallions, Chopped
1 Tablespoon Vegetable Oil
1 Teaspoon Annatto Powder
1/4 Teaspoon Onion Powder
1/4 Cup Water
1 Tablespoon Vinegar, White
3 Each Allspice Berries
To Taste Salt


  1. Stem and seed the Scotch Bonnet pepper and slice thinly.
  2. Mix the Scotch Bonnets, red peppers, onions, garlic, thyme, veggie oil, annatto powder, onion powder, garlic powder, in a bowl and let sit for 30 minutes.
  3. In a skillet sauté the veggies, add the water, vinegar and allspice berries to the mixture and reduce. Season with salt to taste.
  4. Fry the calamari according to package instructions to an internal temperature of 165°F.
  5. Toss the fried calamari with the veggies and serve with your favorite Caribbean pepper sauce.
