Caribbean Citrus Lobster & Seafood Ceviche

For Ceviche:
1 Pack Lobster Sensations® (Item# 004610)
1 Cup Coconut Milk
1/2 Cup Freshly Squeezed Lime Juice
1/2 Cup Freshly Squeezed Orange Juice
1/4 Cup Rice Vinegar
1 Tablespoon Fish Sauce, Thai Or Vietnamese
2 Each Serrano Chiles, Seeded, Membrane Removed, Cut Lengthwise
1 Tablespoon Ginger, Fresh, Peeled, Chopped
1 Teaspoon Kosher Salt
1 Cups Mango Pico De Gallo


  1. Make the Ceviche: In a nonreactive bowl, mix together all of the ceviche ingredients, season with salt to taste, cover, and refrigerate.
  2. To Serve: Scoop 3/4 cup ceviche into a margarita glass or bowl and top with 2 tablespoons of mango pico de gallo. Serve with a chip trio such as beet, taro & plantain chips.
